Research:

Rachel's research interests involve nutrition, Mental Health, Metabolism and Microbiome. More specifically, she is interested in understanding how a person’s nutrition, mental health, and microbiome work together in preventing or progressing poor health, obesity, and obesity related disease. She currently works as the Registered Dietitian within the University Recreation Center where she plans to combine her expertise as a nutrition counselor and research interests for future research projects.

Why did you choose UAB?

I chose to continue my education at UAB because of the institutions continued excellence with research, service and innovation. As a masters level graduate student, I was able to meet some of the outstanding faculty and PhD students within the nutrition sciences department, gaining a glimpse of what my future could be as a researcher. What I loves most about UAB is that the environment inspires discovery, diversity, and collaboration.

Any special interests, hobbies, or fun facts?

Outside of the department, I enjoy finding ways to connect my hobbies with volunteerism and opportunities to give back. Providing nutrition education to young women involved in a scholarship program, Distinguished Young Women of Baldwin County, is one way that I give back each year. Since moving to Birmingham, I have found weekend enjoyment with hiking, visiting the local farmers markets, and trying new cuisine.
