2 cups sliced red potatoes
1/2 cup low fat sour cream
1/4 cup sliced green onions
1 teaspoon salt
freshly ground black pepper
1 tablespoon chopped fresh dill

    1. Cover the potatoes with water and bring to a boil
    2. Reduce the heat to medium and simmer until tender, about 10 minutes
    3. Drain the potatoes well
    4. Place potatoes in a bowl and add the sour cream and onions. Stir gently and add the salt and pepper.

Serve warm with a sprinkle of chopped dill
