Individualized Nutrition Counseling
First time clients will be required to have a 1-hour initial consultation. After that consultation, additional session may be scheduled as 30-minute follow-up sessions.
- 1-hour Initial Consultation: During this consultation, the Registered Dietitian will review the client’s medical history and detailed food log, analyze their caloric and nutrient intake, discuss their nutritional goals, and establish a plan to help them reach those goals accounting for their food preferences, physical activity level and health status.
- 30-minute follow-up sessions: Clients can schedule follow-up sessions to check in with the Registered Dietitian so they may evaluate the client’s progress. Goals may be revised following discussions to establish other ways to continue working towards their goals as necessary.

Health Coaching
This is a less personalized alternative to complete nutrition counseling. During a health coaching session, the dietitian will provide the client with basic information regarding meal preparation and tips for following dietary guidelines and physical activity recommendations. Please be aware that because this is a less intensive approach to nutrition counseling, Dietetic Interns are qualified to lead the sessions and may or may not do so depending on availability.

Nutrition Presentations
Our Dietitian, Katie, delivers presentations on nutrition-related topics on campus every Wednesday as part of University Recreation’s Wellbeing Wednesday initiative. Additionally, other UAB departments or outside companies may outsource this service as part of Rec on the Go in which Katie would deliver a presentation to the department/business to educate participants on the topic requested.

Cooking Demonstrations
Cooking demonstrations are an excellent hands-on approach to gaining skills in the kitchen. As part of University Recreation’s Wellbeing Wednesday initiative, the Registered Dietitian delivers cooking demonstrations once a month known as Culture Kitchen. During these demos, an international dish is prepared, cooked and served to participants to celebrate cultural cuisines and diversity here at UAB. Check out our latest Well-Being Wednesday info here!

Personalized Grocery Shopping
Personalized grocery shopping is becoming increasingly popular as more people are beginning to recognize the role of their grocery store in supporting their health and the importance of having the guidance of a dietitian.
Included in this program is a 1 hour initial consultation to gather health history, taste and texture preferences, grocery budget, and nutritional goals. The dietitian will then use the grocery budget to purchase foods online from the client’s preferred grocery store based on information gathered during the initial consultation. The client is responsible for picking up their own groceries.
A post-consult package will be provided outlining meal preparation techniques, recipes for cooking the ingredients and recommendations for portioning and building their plate. Additionally, proper storage and food handling methods will be provided.
